Cebu City is full of great restaurants already. And so, even if it’s an already famous brand–if it doesn’t really have something unique to offer, then it would not last for long. Yes, people would be curious for the first few months, but curiosity fades. Eventually, people would realize whether or not you’re worthy of their visit–especially, of their hard-earned money. Army Navy is a “sister” restaurant of Yellow Cab that serves burgers, tacos, burritos, onion rings, fries, and the usual drinks. But they attract regulars because they don’t just serve food–they serve scrumptiously huge helpings. Oh yes, you would already feel stuffed just by looking at their Bully Boy Burger… or their equally huge burritos. I kid you not!

Amazingly Yummy Menu

Bully Boy Burger–the Army Navy’s superstah! Or their classic burger, then add some crispy fried chicken and burritos, and your grin will last ’til next month.

Now, about the place–it is delightfully “military” themed. Their decor is cutely reminiscent of a real army camp’s mess hall, and so do the tables and benches. Names of the food are also word plays of U.S. Army thingies and stuff. They made me smile. :P

Right now though, the only open branch they have is at Ground Floor Eblock 2 IT Park–a few steps from the Yellow Cab place. However, there is another branch in Ayala Terraces that is soon to open. Hopefully, it would this 2013–been waiting for this one to do so last year. Hehe.

So, how do you make some delicious binignit?

Of course, you need the Ingredients–and they are:

Php 42/kilo : Yam

Php 2 each : Bananas

Php 20-30 : Jackfruit (slice)

Php 20/kilo : Sweet Potatoes

Php 10 each : Coconut Shavings

Php 20-30 : Pearl Tapioca (can)

Php 38/kilo : Raw Sugar

Optional ingredient: sticky rice [I didn't use sticky rice in this recipe. ^_^]

1. Prepare all the ingredients before you start boiling the water.

Peel and slice the yam and sweet potatoes into squarish bits. Peel the bananas and slice them like you would plantains, only a little thicker. And divide the jackfruit into strips.

Wash the coconut shavings once. Drain. Then put some water and drain but do not squeeze. With a strainer, get clumps of the coconut shavings over the strainer(which should be placed above a bowl), and squeeze the clumps over it. Discard the squeezed out shavings(put them in a plastic bag, to be exact). Do this until you’re finished with all the coconut shavings. Et voila! You now have your coconut milk.

Note: Crush, or separate, as much of the clumpy pearl tapioca as you can. Apparently, they don’t separate on their own when you boil them.

2. Put some water in a pot and set it to boil.

When the water is boiling, you put first the ones that would take the longest to cook. So, put the yam first. Check after 20 minutes or so. When it turns a little mushy on the outside, start putting the other ingredients in. So the order after the yam should be: a) pearl tapioca [pink & white] b) bananas and sweet potatoes c) jackfruit strips and sago pearls. You can check the ingredients for softness with a fork.

Binignit tastes great if the ingredients are perfectly soft and chewy. Not too soft, though, so you have to be vigilant.

3. Add the raw sugar and coconut milk.

Put as much sugar as your taste buds would like. :P

Do several yummy taste tests. ^_^

Stir the pot occasionally so the yam and tapioca do not stick to the bottom of the pot. These things tend to do that, especially if your pot is not coated with teflon. :D

After 20 minutes or so, check the ingredients again for softness.

When you have judged that the ingredients are perfectly soft, turn of the stove and let it cool for a couple of minutes. Then serve.

Note: If you don’t want your binignit to be too sticky, put only about 1 1/2 cup of tapioca when cooking in a big pot. Tapioca tends to absorb a lot of the water.

Finished Product:

Binignit is perfect for holidays, especially when you have a LOT of time to spare… like this coming long weekend. ^_^

Wyndelle Remonde held the opening of his first solo exhibit Wednesday before last at the QUBE Gallery, CAP Center. Entitled Work Space, the exhibit is a requirement for the completion of his bachelor’s degree in Fine Arts from the University of the Philippines.

While he may only have a Certificate in Fine Arts (for now), we’re sure you will agree with us that this young man will go places.

And quite cleverly, the artist also showed us a glimpse into his work space via the following display in the middle of the gallery:

It would have been a travesty to show you these photos without asking the artist a few questions, so here you go:

1. Why Work Space? How did the name of your exhibit/thesis come about?
Because after I graduated CFA, my life revolved around my work space and it’s my source of income. And as a self-supporting student, I need my work space to back my financial hitches.

2. In your opinion, what is an ideal work space for an artist?
I think there’s no ideal as long as you are comfortable working in it. And everyone has their own comfort zone.

3. What’s next for Wyndelle Remonde?
I’m planning to have more upcoming exhibits here in Cebu City then in Manila hopefully.

You can catch Wyndelle’s work at the Persimmon Mabolo branch of QUBE Gallery starting this week. We weren’t able to take a photo of the artist but you can check out his Facebook page.

And not just because I am partly Chinese. That is beside the point–or so I like to tell myself. Anyway, I just love good nosh–that is the long and short of it. :D So you can understand why I was so excited last weekend when I spied a banner of this newly opened restaurant in Robinsons’ Cybergate as I was on my way to meet a friend for lunch. Its name is Hainanese Delights. Segue, their decor is quite cute, too! Sooo pink. :)

At first read, I thought the resto was Vietnamese. Then a few days ago, I realized I have read the name Hainan before… from one of my numerous research about China’s tourist destinations. Hehehe. Yes, senility chomps off a bit of my grey matter sometimes. :P

Never mind that… let’s proceed to the juicy scrumptious bits of this whole matter.

Dumplings, Spicy Squid, Steamed Chicken, and Veggies with Tofu

Jump start your summer with a well-deserved trip around the beautiful island of Cebu. Organizing a trip is easy; you simply have to check out our On The Road posts here on Hanging Rice. Another option is joining 71oh7.

71oh7 is one of the most exciting things to happen to Cebuanos who are constantly bitten by wanderlust. And come March 22-24, the group is organizing a road trip to the southern sites of Cebu. We chatted with 71oh7 and they gave us reasons why you should be joining their 3-day adventure.

1. What inspired you to organize this road trip?

My love for CEBU. (cheesy! I know.. But I am really one proud Cebuana ever since and I brag about my hometown wherever I go.)
It has always been one item on my bucket list to tour around Cebu for 10 days. I daydream of just being on the road and stopping when I see something beautiful along the way. Last year, I founded a travel org with the mission to inspire everyone to travel and go local. 71oh7 was born. Representing the 7,107 beautiful islands of the Philippines that will make you go “OH! WOW!”. And I couldn’t be more proud to showcase what we have here in Cebu, starting off, the south side. I want to let other people know that there is so much more to CEBU than just the Magellan Cross or the beaches of Mactan.

2. What can people expect from this trip?

We want everyone who joins to get the most of Cebu’s south side to explore and relax. Dip in crystal clear waters, plunge into magnificent falls, and discover history with visits to old churches and laze by the beach with gastronomic food in between. It is not your usual road trip. You will make friends along the way as the sights you see captivate you.

3. Are you planning on organizing other trips to other parts of Cebu? How about the whole country?

We have actually done a couple of group trips. 71oh7 have travelled to MALAPASCUA and CAMOTES ISLAND in CEBU as well as one trip to EL NIDO PALAWAN. We have upcoming trips to CORON, SIARGAO/SURIGAO, SURIGAO DEL SUR, and DUMAGUETE-SIQUIJOR. We want to create as much trips as possible to every region in our country.

What contagious enthusiasm for travel (and Cebu)! Sign up now!
